Tomato and Goat Cheese Bruschetta
INGREDIENTS
4 slices of baguette
2 ripe tomatoes
100g goat cheese
2 cloves of garlic
2 tablespoons extra virgin olive oil
Fresh basil leaves
Salt and freshly ground black pepper, to taste
PREPARATION
Preheat the Oven: Preheat the oven to 180°C (350°F).
Prepare the Tomato Topping:Dice the tomatoes and place them in a bowl. Add finely chopped garlic, olive oil, chopped basil, salt, and pepper to the tomatoes. Mix all the ingredients well to create a homogeneous mixture. Let it sit for a few minutes to allow the flavors to meld.
Prepare the Goat Cheese: Cut the goat cheese into thin slices.
Toast the Bread: Place the baguette slices on a baking sheet and toast them in the oven for about 3-4 minutes on each side, or until they are lightly golden and crispy.
Garlic Infusion: Take the toasted bread slices out of the oven and let them cool slightly. Rub them lightly with a clove of garlic to add a subtle garlic flavor to the bruschetta.
Assemble the Bruschetta: Spread the tomato mixture generously over the toasted bread slices. Arrange the goat cheese slices on top of the tomatoes.
Final Baking:Put the topped bruschettas back in the oven for about 5 minutes, or until the goat cheese is slightly melted.
Garnish and Serve: Remove from the oven and garnish the bruschettas with a few fresh basil leaves.
