tiramisu cheesecake bars
INGREDIENTS
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
16 ounces cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 tablespoon espresso powder dissolved in 1 tablespoon hot water
1/4 cup cocoa powder, for dusting
Whipped cream for topping (optional)
PREPARATION
Preheat your oven to 180°C (350°F) and line an 8x8 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
In a medium bowl, mix together graham cracker crumbs, 1/4 cup granulated sugar, and melted butter until combined. Press the mixture evenly into the bottom of the prepared baking pan.
In a large mixing bowl, beat cream cheese and 1/2 cup granulated sugar until smooth and creamy.
Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract and dissolved espresso powder until fully incorporated.
Pour the cheesecake batter over the graham cracker crust and spread it evenly with a spatula.
Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
Remove from the oven and let it cool completely in the pan on a wire rack.
Once cooled, refrigerate for at least 4 hours or overnight to set.
When ready to serve, use the parchment paper overhang to lift the cheesecake out of the pan and transfer it to a cutting board.
Cut into bars, dust with cocoa powder, and top with whipped cream if desired.
