Stuffed Peppers with Ground Beef and Rice

INGREDIENTS

  • 4 bell peppers, tops cut off and seeds removed

  • 1 lb ground beef

  • 1 cup cooked rice

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 can (14.5 oz) diced tomatoes

  • 1 teaspoon dried oregano

  • 1 teaspoon dried mint (optional)

  • Salt and pepper to taste

  • 1/2 cup feta cheese, crumbled

  • Olive oil

PREPARATION

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, heat a little olive oil over medium heat. Add the onion and garlic, cooking until softened.

  3. Add the ground beef and cook until browned, breaking it up with a spoon.

  4. Stir in the diced tomatoes, cooked rice, oregano, mint (if using), salt, and pepper. Cook for a few minutes until well combined.

  5. Remove from heat and stir in the crumbled feta cheese.

  6. Stuff the bell peppers with the beef and rice mixture. Place the peppers in a baking dish and drizzle with olive oil.

  7. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the peppers are tender.

  8. Serve hot, garnished with extra feta cheese if desired.
