Stuffed Peppers with Ground Beef and Rice
INGREDIENTS
4 bell peppers, tops cut off and seeds removed
1 lb ground beef
1 cup cooked rice
1 onion, finely chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 teaspoon dried oregano
1 teaspoon dried mint (optional)
Salt and pepper to taste
1/2 cup feta cheese, crumbled
Olive oil
PREPARATION
Preheat the oven to 375°F (190°C).
In a large skillet, heat a little olive oil over medium heat. Add the onion and garlic, cooking until softened.
Add the ground beef and cook until browned, breaking it up with a spoon.
Stir in the diced tomatoes, cooked rice, oregano, mint (if using), salt, and pepper. Cook for a few minutes until well combined.
Remove from heat and stir in the crumbled feta cheese.
Stuff the bell peppers with the beef and rice mixture. Place the peppers in a baking dish and drizzle with olive oil.
Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the peppers are tender.
Serve hot, garnished with extra feta cheese if desired.
