Spanish Gazpacho

INGREDIENTS

  • 6 ripe tomatoes, chopped

  • 1 cucumber, peeled and chopped

  • 1 green bell pepper, chopped

  • 1 small red onion, chopped

  • 2 cloves garlic, minced

  • 3 cups tomato juice

  • 1/4 cup olive oil

  • 2 tablespoons red wine vinegar

  • Salt and pepper to taste

  • Fresh basil or parsley for garnish

PREPARATION

  1. Combine tomatoes, cucumber, bell pepper, onion, and garlic in a blender. Blend until smooth.

  2. Add tomato juice, olive oil, and red wine vinegar. Blend again until well mixed.

  3. Season with salt and pepper to taste.

  4. Chill in the refrigerator for at least 2 hours before serving.

  5. Garnish with fresh basil or parsley.
