Spanakorizo

INGREDIENTS

  • Fresh spinach

  • rice

  • onion

  • garlic

  • vegetable broth or water

  • lemon juice

  • dill (optional)

  • extra virgin olive oil

  • salt, and pepper.

PREPARATION

  1. Rinse the rice under cold water until the water runs clear.

  2. In a pot, sauté chopped onion and minced garlic in olive oil until softened.

  3. Add the rice and stir for a couple of minutes.

  4. Pour in vegetable broth or water, enough to cover the rice.

  5. Bring to a boil, then reduce heat to low and cover.

  6. Let it simmer for about 15 minutes or until the rice is almost cooked.

  7. Stir in chopped spinach and cook until wilted.

  8. Add lemon juice, salt, and pepper to taste.

  9. If desired, sprinkle with chopped dill before serving.
