Pollo alla Parmigiana

INGREDIENTS

  • 4 chicken breasts

  • Salt and freshly ground black pepper

  • 1 cup all-purpose flour

  • 2 eggs, beaten

  • 1 cup breadcrumbs

  • 1/2 cup grated Parmesan cheese

  • 1 cup marinara sauce (homemade or store-bought)

  • 1 cup shredded mozzarella cheese

  • Olive oil for cooking

  • Fresh basil leaves, chopped, for garnish

PREPARATION

  1. Prepare the Chicken: Season both sides of the chicken breasts with salt and pepper. Dredge each chicken breast in the flour, then dip into the beaten eggs, and coat with the mixture of breadcrumbs and grated Parmesan cheese, pressing lightly to adhere.

  2. Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the breaded chicken breasts and cook for about 4-5 minutes per side, or until golden brown and cooked through. Remove from the skillet and drain on paper towels.

  3. Assemble the Chicken Parmesan: Preheat your oven's broiler. Place the cooked chicken breasts in a baking dish. Spoon marinara sauce over each chicken breast and sprinkle with shredded mozzarella cheese.

  4. Broil the Chicken: Put the baking dish under the broiler for a few minutes, or until the cheese is melted and bubbly, and starts to brown.

  5. Serve: Remove from the oven and let it cool for a minute. Garnish with chopped fresh basil leaves. Serve the Chicken Parmesan hot with pasta or a green salad.
