Panzanella
INGREDIENTS
Stale bread
ripe tomatoes
cucumber
red onion
basil leaves
extra virgin olive oil
balsamic vinegar
salt
pepper
PREPARATION
Tear the stale bread into bite-sized pieces and soak them in water for a few minutes, then squeeze out excess water.
Chop tomatoes, cucumber, and red onion into bite-sized pieces.
Mix bread pieces with the chopped vegetables and torn basil leaves.
Dress with olive oil, balsamic vinegar, salt, and pepper.
Let it sit for about 30 minutes before serving to allow flavors to meld.
