Maccu di Fave (Sicilian Fava Bean Purée)

INGREDIENTS

  • 2 cups dried fava beans, soaked overnight and peeled

  • 1/4 cup olive oil, plus extra for serving

  • 1 small onion, finely chopped

  • 1 garlic clove, minced

  • Salt and pepper, to taste

  • Fresh fennel fronds or fresh basil, for garnish

PREPARATION

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic and cook until softened.

  2. Add the soaked fava beans and cover with water. Bring to a boil, then reduce the heat and simmer for 1-1.5 hours, stirring occasionally, until the beans are very tender and falling apart.

  3. Mash the beans into a purée, adding extra water if needed to reach a smooth consistency. Season with salt and pepper.

  4. Serve warm, drizzled with olive oil and garnished with fennel fronds or basil.
