Fruit Tiramisu

INGREDIENTS

  • 250g mascarpone cheese

  • 200ml heavy cream

  • 3 eggs, separated into whites and yolks

  • 1/2 cup sugar

  • 1 teaspoon vanilla extract

  • 200g ladyfinger biscuits

  • 1/2 cup strong coffee, cooled

  • Fresh fruits of your choice (strawberries, raspberries, kiwis, mangoes, etc.), cut into pieces

  • Cocoa powder, for dusting

PREPARATION

  1. Prepare the Tiramisu Base: In a bowl, mix mascarpone with half of the sugar and vanilla extract until smooth and creamy.

  2. Prepare the Whipped Cream: In another bowl, whip the heavy cream until stiff peaks form. Set aside.

  3. Mix the Egg Yolks: In a third bowl, whisk the egg yolks with the remaining sugar until well incorporated and pale.

  4. Incorporate Mascarpone: Add the mascarpone mixture to the egg yolks and gently mix until smooth.

  5. Add Whipped Cream: Fold the whipped cream into the mascarpone mixture gently to preserve the lightness of the cream.

  6. Whip Egg Whites: In a fourth bowl, beat the egg whites until stiff peaks form.

  7. Final Incorporation: Gently fold the whipped egg whites into the mascarpone mixture, using gentle bottom-up motions to retain the airy texture.

  8. Assemble the Tiramisu: Quickly dip the ladyfinger biscuits into the cooled coffee and arrange them at the bottom of a serving dish.

  9. Mascarpone Layer: Spread half of the mascarpone mixture over the biscuits.

  10. Add Fruits: Spread the fruit pieces over the mascarpone layer.

  11. Second Mascarpone Layer: Spread the remaining mascarpone mixture over the fruits.

  12. Chill: Cover the Tiramisu dish with plastic wrap and refrigerate for at least 4 hours, ideally overnight, to allow the flavors to meld.

  13. Before Serving: Generously dust the top of the Tiramisu with cocoa powder.
