Fruit Tiramisu
INGREDIENTS
250g mascarpone cheese
200ml heavy cream
3 eggs, separated into whites and yolks
1/2 cup sugar
1 teaspoon vanilla extract
200g ladyfinger biscuits
1/2 cup strong coffee, cooled
Fresh fruits of your choice (strawberries, raspberries, kiwis, mangoes, etc.), cut into pieces
Cocoa powder, for dusting
PREPARATION
Prepare the Tiramisu Base: In a bowl, mix mascarpone with half of the sugar and vanilla extract until smooth and creamy.
Prepare the Whipped Cream: In another bowl, whip the heavy cream until stiff peaks form. Set aside.
Mix the Egg Yolks: In a third bowl, whisk the egg yolks with the remaining sugar until well incorporated and pale.
Incorporate Mascarpone: Add the mascarpone mixture to the egg yolks and gently mix until smooth.
Add Whipped Cream: Fold the whipped cream into the mascarpone mixture gently to preserve the lightness of the cream.
Whip Egg Whites: In a fourth bowl, beat the egg whites until stiff peaks form.
Final Incorporation: Gently fold the whipped egg whites into the mascarpone mixture, using gentle bottom-up motions to retain the airy texture.
Assemble the Tiramisu: Quickly dip the ladyfinger biscuits into the cooled coffee and arrange them at the bottom of a serving dish.
Mascarpone Layer: Spread half of the mascarpone mixture over the biscuits.
Add Fruits: Spread the fruit pieces over the mascarpone layer.
Second Mascarpone Layer: Spread the remaining mascarpone mixture over the fruits.
Chill: Cover the Tiramisu dish with plastic wrap and refrigerate for at least 4 hours, ideally overnight, to allow the flavors to meld.
Before Serving: Generously dust the top of the Tiramisu with cocoa powder.
