Balsamic Glazed Caprese Chicken
INGREDIENTS
4 boneless, skinless chicken breasts
Salt and pepper, to taste
1 tablespoon olive oil
1 cup cherry tomatoes, halved
1 ball fresh mozzarella cheese, sliced
Fresh basil leaves, for garnish
Balsamic Glaze:
1/2 cup balsamic vinegar
2 tablespoons honey or brown sugar
1 teaspoon soy sauce (optional, for depth of flavor)
PREPARATION
Prepare the Balsamic Glaze:
In a small saucepan, combine balsamic vinegar, honey (or brown sugar), and soy sauce. Bring the mixture to a gentle boil over medium heat.
Reduce the heat to low and simmer the mixture for about 10-15 minutes, or until it has thickened and can coat the back of a spoon. Stir occasionally. Remove from heat and set aside.
Prepare the Chicken:
Preheat the oven to 375°F (190°C).
Season both sides of the chicken breasts with salt and pepper.
In an oven-safe skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown. Remove the chicken from the skillet and set aside.
Assemble the Caprese Chicken:
In the same skillet, add halved cherry tomatoes. Cook for 2-3 minutes, allowing them to soften slightly.
Return the cooked chicken breasts to the skillet. Top each chicken breast with a slice of fresh mozzarella cheese.
Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Glaze and Serve:
Remove the skillet from the oven. Drizzle the balsamic glaze over the chicken breasts.
Garnish with fresh basil leaves for a burst of color and added flavor.
